I’m a New Yorker and boy do I love pizza so I was blown away when my brother shared this plant-based alternative. I added my little twist to this already delicious recipe, and decided to share it with you all!
Naan Pizza w/ Avocado is perfect for lunch or served as an appetizer. It’s simple, loaded with flavor and you can customize it with all kinds of vegetables and toppings.
Ingredients
1 naan sheet
1 cup fresh spinach
1 avocado
5 grape tomatoes
Pesto sauce (recipe below)
Celtic sea salt, to taste
Optional: onion powder, cayenne pepper, smoked paprika, extra virgin olive oil.
PESTO
(if you don't feel like making your own, and/or pressed for time, you can use store-bought option)
2 cups fresh basil
1⁄2 cup walnuts
1⁄4 cup extra virgin olive oil
Juice from 1 lemon
1 garlic clove
1/8 tsp black pepper
Pinch of Celtic sea salt
Instructions
Preheat oven to 375 degrees.
Add all ingredients for pesto sauce into a food processor/blender. Blend until nuts are in tiny pieces.
Glaze naan with pesto sauce and cook for 10-15 mins until crust is crispy.
While the base is cooking prepare toppings by cutting tomatoes in half and mashing avocado into a guacamole consistency in a separate bowl.
Remove naan from oven and top with spinach and cook for another 5 mins.
Remove from oven.
Sprinkle optional seasonings (onion powder, cayenne pepper and/or smoked paprika)
Spread an even coat of mashed avocado over the spinach and drizzle with optional extra-virgin olive oil.
Top with tomatoes. Cut and enjoy!
